FRENCH ONION POTATO CASSEROLE WITH CARAMELIZED ONIONS

Ingredients

6-8 potatoes of your choice
8 Tbsp. butter, melted
¾ cup heavy cream, heated
2 Tbsp. French Onion Baked Dip Mix

Instructions

Peel and cut potatoes into chunks, place in a large pot and cover with cold water. Generously salt the water and bring to a boil over high heat. Lower the heat to medium and gently simmer until the potatoes are completely tender. Drain the potatoes and return them to the pot. Mash the potatoes with a potato masher. Add the melted butter and warm cream; add French Onion Baked Dip Mix and combine until well blended. Season with salt and pepper. Place in a serving dish and top with caramelized onions.
